    Speaking of Chili

    My reference to having made some chili for lunch yesterday provided a couple of interesting tips by Roger and Fred, so I thought I should start a proper thread.

    The recipe I used is essentially like this one:

    ground beef

    olive oil

    onion, diced

    diced tomatoes and green chilies

    tomato sauce (not ketchup)

    beer

    garlic, minced

    chili powder

    ground cumin

    cayenne or any other hot pepper

    finely ground cornmeal or Mexican style masa harina

    Salt



    I like mine hot, really hot. Northeastern Brazilians love spicy food.

    What are your preferences?

    Careful there, Mr. Cane. Chili is considered a religion in many areas of the U. S. If you add beans, you'll have a war on your hands. I knew a guy who was a three-time chili cook-off champion. To guys like that, it's serious business!

    And yes, I like mine hot, too.

    I'm a fan of chili myself. especially the proverbial 5- alarm.
    |I do put beans in my chili, because that's how it was always made growing up. My grandmother would mash them before adding - my mom didn't and I don't. I suppose the recipe can easily be made without.
    Mine is
    ground beef (preferably 75-25 or at most 80-20|)
    onion
    garlic
    crushed tomatoes
    tomato sauce
    cayenne
    chili powder
    cumin
    mexican oregano
    vinegar
    dash of salt.
    I like adding chipotle peppers
    and I'll roast up a poblano or 2 to chop and add in.

    Indeed.

    I like both, with aand without them beans, and I love all kinds of beans. But due to a digestive peculiarity, I can't eat them without spending the following 24 hours suffering a lot. So I prefer the no-bean Chili recipes.

    The adding of beer in the recipe I usually make adds a lot of flavor.

    If I remember correctly, one prize-winning chili recipe included the use of Guiness.

    Irish chili? I bet if you do that the beans will start fighting inside your stomach lol

    I might have forgotten to say, I don't use beans, I like my chili all-beef.

    I used to work for the local power company, the headquarters were in Ft. Worth, so a lot of the engineers sent out to help were Texans. A pair were here in town helping to get a microwave system up and running, and one fellow told us he had won several "Chili" cookoffs, and was thinking of entering one south of town. We told him it was a "Chile" contest, emphasing the use of Chile, not the meat based Chili they do in Texas. He was confused, but the next day one of the office girls brought some Pasole and some beans, he said he still didn't understand the difference, there was some pork in the Pasole!

    Here behind the Cheddar Curtain my wife makes what we northerners call Chili-con-carne that has meat and all the things you have mentioned plus she throws some form of beans into it. I just know I love the stuff and the heat if it makes my nose run when I eat it…and, I throw chopped raw onions and shredded cheese on it when serving it. YUMMY!

    You want your nose to run?

    Try hot Chinese mustard on egg rolls or fried won tons. It's potent enough to melt a plastic spatula!
