Nope. Capacitors can sound different in a guitar, but they're an infitessimal part of the sound equation. Probably less of a difference than a 1V swing on your line voltage.

My amp tech friend built a couple of identical amps a few years ago. (I think they were 18 watt). One used Sprague orange drops, and the other Mallory 150's. My ears couldn't tell the difference, but many of the local musicians had their opinions. He told me it was a joke, as the same guy that liked one, liked the other the next time he was over. (He recently had a problem with a repair that he used one or the other cap, and the owner said he ruined his amp, and made him change it). I think he proved his point that most of us can't tell the difference, but does anyone?
Well, I was assuming that your statement was regarding one capacitor as a tone control in a guitar.
Caps make a bigger difference in an amp, IMHO. One poorly chosen cap in an amp won't kill it, but several will. For instance, if you pulled all of the blue tubular caps out of a blackface amp, and put in polyester orange drops, even your audience would know the difference.

Sorry Kap'n, I'm about to buy parts for a Deluxe build, and wanted to see if I was missing something.
IMHO, the Mallories, or the Weber yellow caps are just fine.
