    Scrambled eggs

    Do you mix the eggs until they’re homogeneously yellow before you fry them or do you crack them into the hot butter and stir them lightly?

    Either method may be considered "correct" and both ways are delicious.

    I mix them up pretty well. I usually add oregano, black and cayenne pepper, a few drops of lemon juice, a tiny dash of water.

    I’m a fan of pepper too.

    When I add liquid to the eggs I use milk, though.

    Instead of milk we add half and half dairy creamer to make the eggs “fluffy”.

    We mix them up pretty well, add a splash of water and cook them with butter. I'm interested in trying other methods listed here!

    I do both ways: either whisk the eggs in a bowl with salt, black pepper and a splash of milk before frying, or just crack them on the melted butter, add salt and pepper and stir them until ready.

    I favor bacon grease for frying eggs, or butter if cooking an omelet. My Dad preferred olive oil for omelets but I just never developed a taste for that method.

    If you don’t mind sharing, do you have a favorite Chili recipe?


    Btw this is my own version of Huevos Rancheros. I cook the egg in the salsa instead of dropping the salsa on the fried eggs. The ingredients are pretty much the same.

    doesn't the salsa spatter like crazy when there's heat under it?

    Not really. Maybe because I add a little olive oil to it.
