I Like Black Beans A Lot!
Started thinking about how often I eat black beans today and hardly a week goes by that they are not incorperated in some sort of meal.
Black bean soup, black beans & rice, black bean tacos, etc.
Thing is I never ate them as a youth, not typical Southern fare (S.E. NC). Must have been well into my 20s before eating them. Now I can't seem to get enough!

But...they have an adverse gastrointestinal effect on me that I rarely suffer from.

I was thinking the other day that some company that cans beans -- Bush Beans, maybe -- should have the balls to use the slogan "The Magical Fruit."

Yes, black beans is a staple in our household as well. Can't avoid it being in Texas married to a Mexican! My wife uses them to cook up a mean tortilla soup, and Mexican chili, and cilantro lime white rice burritos, and... :D

It was mostly blackeyed peas in our household back in the day. Still love them as well, but I have to say black beans are now my fav.

Green beans, red beans, black beans, navy beans......I'll eat nearly any type of bean.
BUT DON'T EVEN SHOW ME A LIMA BEAN.
I HATE 'EM!!!

My mom has made them w/ green onions, white rice and red vinegar since I was a kid. IS a traditional southern dish down here.

Of course. She also introduced me to pepper sauce...not sure what it's actual name is...it's the little green peppers with the vinegar sauce in a bottle, used with collard greens and the sort.

We're fond of a Santa Fe chicken casserole dish as well......black beans, corn, rice, diced tomatos, red & green bell peppers, and onions with grilled chicken chunks. Season to taste with cumin, chili powder, paparika, cayenne, salt, garlic, and salsa. Quesadillas on the side.

I never tried pepper sauce on beans. I like it on collard greens, though. It's not super hot -- just gives it a little kick.

Love black beans with Mexican dishes. But I love white beans (and brown beans) with cornbread. Those beans scream for corn pone!

I love all beans except for string beans - but my all-time fave are LIMA BEANS. Isn't it funny, one man's turd is another man's treasure, I guess...

I never acquired a taste for black beans, ate some of the white ones, while in the navy, but being from New Mexico, we cook a pot of pinto beans every week. I love the pintos like Muddy loves his black beans. One thing though, they've never been able to can them, and preserve the flavor, so maybe I need to cook some of the black ones to get the real taste!

I never ate nothing but pinto beans until I married the Cubana. Now I'm lucky if I eat anything BESIDES black beans. She accommodates me from time to time with refried black beans...

C'mon, Kev......grits are and remain a morning staple, except for those with careers in the financial service industries. Those corporate fat-cats learned long ago what a "teachable moment" the first meal of the day can be.
Example:
The chicken merely has a limited partnership in breakfast.
But the pig......ah, the pig. He's made a long-term investment!

Same with the gastrointestinal subject...I don't need any teachable moments at those morning meetings I have to attend.
Kind of goes with "Lettuce ain't food..it's what food EATS"- I heartily agree, but wow what a mess it can create!
I'm stuck on my high protein, low fiber breakfasts, gets me going and doesn't load me down.

After the discussion here, I found some packaged black beans, and cooked a pot yesterday. They were pretty good, to me they taste like a cross between a black eyed pea, and butter beans,(my southern grandmaw served a lot of those). I know a lot of your recipies called for different ingredients to make a main dish, but I just ate them on the side of my red enchillada, instead of frijoles.

First of all, black bean soup is a glorious invention and incredibly filling. I almost always get the stuff from Whole Foods soup bar when it's offered. The recipes on the side of the bean can are what I usually use the beans for in my own cooking. I also love quinoa. So, I post this recipie. I have not tried it yet but I aim to in the near future.
