    So----What's On The Grill Today (Labor Day)?

    Happy Labor Day,my friends!
    I started to do the steak thing,actually had a nice NY Strip in the buggy,but decided on something different---garlic and herbs pork tenderloin.Mrs. Refin is getting her applewood smoked turkey tenderloin.Also throwing on some corn on the cob.and mixing it up with some fire roasted potatoes and a salad.MMMMMMMMMMM.

    Had some nice porterhouses last night.

    Today, I'm Chinese-marinading some ribs.

    Bratwurst, a nice compliment of veggies (bell pepper, jalapenos, vidalia onion, asparagus...).
    Would have been a great day to do some ribs, I should have defrosted them!

    Dang, I don't have anything on hand but some frozen Bubba Burgers.

    Poor planning. Now I have to decide if I want to shower and shave on my day off just to go get a steak.

    Did some slow cooked/apple smoked ribs yesterday so today it was simple chicken breasts with some Diana's BBQ sauce, fresh veggies, watermelon and peach and raspberry crisp. Only the chicken hit the grill by the way!

    Ok brace yourselves.
    This was the BEST grilling we have ever done.

    Here's what transpired after a couple of beers and a fine CAO Brazilia...

    Bratwurst was a given, a done deal.
    Then I went crazy:
    Took the large green fresh bell pepper, split it in half.
    Loaded it up with pepperoni slices and sprinkled that with chipotle dry seasoning. Covered it full with Philly Cream Cheese and roasted them as loaded halves.
    Then for the onion-sliced it in flower fashion from the top and stuck some garlic cloves in it with several pats of real butter.
    Wrapped it in foil and put it on the grille.
    Did the same with cherry tomatoes, just cooked them whole, no seasoning.
    Then did a couple of fresh jalapenos from the garden, making our own chipotle. Just let them sit and slowly roast.
    Put the hoagie buns on the grille for the brats, served the bell peppers loaded, and used that onion as garnish for the brats along with relish and mustard.

    It was THE BEST food I have ever served, topped off with a fine blanco marguirita Mrs. Cygnus whipped up complete with lime and salt.

    Call me dead, it was that good!
    Those stuffed bell peppers were simply awesome.

    A whole Frozen thawed Salmon. ( not really, just wanted to be part of the thread).
    But really, you can sometimnes get those whole frozen Salmons at stupendous prices, and I'm not a big Salmon fan. I wont eat it generally, except maybe poached, but grilled they are out of this world!

    Flank steak in a simple soy - garlic marinade, grilled to medium rare!
    with not so grilled....
    Corn on the cob with butter, fresh salad lettuce,walnuts,and a touch of raisins with a light vinaigrette. Some fresh cut watermelon cubes to clean the pallete - all with a touch of red wine, topped off with a mile walk, then ice cream and fresh ground coffee We're good here!

    Marinated salmon. We had twice baked potatoes, green beans, steamers and award winning clam chowder from the diner down the street with it.

    I like my salmon firm, so I just do a dry rub of lemon pepper and cook them on the proverbial wetted plank.

    Served on fettucini alfredo, yup.
    And thick texas toast.

    Clam Chowder done right from "back home"...I can't understand just why no one can get it right.
    Kind of like trying to get a true Philly outside of Philly...it can't be that difficult...why keep trying to improve on the perfect just to screw it up?

    Another one...Beef on Weck. Not hard. Can't get a good one outside a 50 mile radius of Buffalo NY.

    It is something to kill for.

    And you can actually savor the clam strips, not silly little suggestions of cast off chunks.

    There's a place across the street from where I work that has that. It's OK, not great. The sad part is that's the best thing they make.

    I actually prefer my salmon raw but my wife doesn't!

    Butterflied flank steak marinated with lemon and garlic. Chicken with some dry rub then the same treatment as the steak. Hebrew National franks for the kids. Some beans, corn on the cob (grilled), and white rice.

    We had a band "family day" cookout and jam session today. We put some hotdogs, rib-eyes, sirloins, baby back ribs, smoked sausage, and chicken on the pit with some applewood for additional smoke flavor. Added some rice dressing, baked beans, potato salad, corn on the cob, and toasted garlic bread.

    I took labor day off and did zero cooking. Instead I feasted on haggis puffs and Scottish meat pies all weekend - courtesy of the Capital District Scottish Games in Altamont, NY.

    Never been to the Scottish games in Altamont, although Mrs. Kap'n told me it's a blast. She bought me a beer mug.
