One is usually all that's needed.
I even removed the second string tree from my Am. Standard Strats and my Hwy1 Strat and filled the hole with cabinet scratch filler stick.
My Hwy1 Strat has a butterfly type and my USACG T-Style has a round string tree.
I like two, but what I like even better is the bar that Teiscos used instead.
WHy? I dunno, I guess i figured the sharper angle of string breaking over the nut would increase sustain and the angle is more consistant with two... and I just like the look.

I know this is probably unhelpful, but I prefer having no string tree at all. Gotoh makes tuners with height-adjustable posts; I use them to eliminate the string trees entirely.
If I didn't have graduated posts, though, I suppose I would use 2 string trees. The top E and B strings would fit on one, but you still really need to lower the G, at the very least.
